Ras Malai
Ingredients
Milk 1 Litre
Full Cream Milk Powder 1 Cup
Baking Powder 1/2 teaspoon
Egg 1
Cooking Oil 1 tablespoon
Sweetened Condensed Milk 1/4 cup
Sugar 1/2 Cup(if you don,t have condensed milk)
Pistachio,almond,green cardamom (optional)
Preparation
Mix milk powder,egg,oil and baking powder in a bowl
Knead well till it is smooth and there are no cracks in dough
If dough is too hard add some milk and if it,s too soft then add some milk powder
Make small balls
Boil the milk in pan and let it cook for 10 minutes (keep the heat low after boiling)
If you are not using condensed milk then add sugar in milk and green cardamom
After 10 minutes add the balls and let it cook on medium heat for minimum 15 minutes
Add condensed milk and let it cook for 5 to 10 minutes
Add pistachio and almond too
Keep it in fridge for minimum 6 hours and serve it cold

shimla mirch qima
Ingrediants
Beef Minced 1/2 kg
Capsicum 1/2 kg
Green chillis 1
Tomato 1 medium
Ginger/Garlic Paste 1 teaspoon
Red chili powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Salt 1/2 teaspoon
Oil 2 tablespoon
Preperation
Heat oil in pan and put the onions in
Cook till the onions are golden
Put the ginger/garlic paste and stir for 2 minutes
Now add salt,red chili powder and turmeric powder
Stir for 5 minutes
Now add the minced meat and cook till the meat changesthe colour
Add 1 cup of water and cover it till the meat is tender

Coconut Balls
Ingredients
Dessicated coconut 1 cup
Sweetened Condensed Milk 1/2 cup
Almonds 2 dozens
Preparation
Mix condensed milk and coconut excluding almonds and 1/6 cup of coconut
Knead till form a thick mixture you can add more coconut if it,s too sticky
With wet hands take some mixture, place one almond inside and make small balls
Now put these balls on the remaining coconut

drumsticks
Ingredients
Drumsticks 1 kg
White Vinegar 2 tablespoon
Salt 1/2 teaspoon
Black pepper powder 1 teaspoon
Ginger/garlic paste 2 teaspoon
Oil to fry
Preperation
Make some cuts in leg pieces and marinate with all the ingredients except oil for minimum 1 hour
Drumsticks 1 kg
White Vinegar 2 tablespoon
Salt 1/2 teaspoon
Black pepper powder 1 teaspoon
Ginger/garlic paste 2 teaspoon
Oil to fry
Preperation
Make some cuts in leg pieces and marinate with all the ingredients except oil for minimum 1 hour
Steam the drumstcks for 40 minutes
Then deep fry these till these are golden and crisp
Serve warm

Bitter melon with mince
Ingredients
Bitter melon 1/2 kg
Beef minced 1/2 kg
Onions 2 Large
Tomato 1 medium
Ginger/garlic paste 1 teaspoon
Green chili 1
Salt 1 table spoon
Red chili powder 1 teaspoon
Turmeric powder 1/4 teaspoon
Coriander powder 1/4 teaspoon
Oil 2 tablespoon+to fry
Preparation
Peel off bitter melon, remove the seeds and cut in small pieces
Put in a bowl with salt (excluding just 1 tea spoon to use later) ,
Mix the salt well on pieces
Leave it for one hour
Cut the onions, one should be in small cubes and the other should be in long,thin slices
Wash the bitter melon well to get rid off salt and let it dry
Put these in hot oil to fry
When bitter melon change the colour,add the thin sliced onions in pan
When the onions are soft, add green chilies
When every thing is soft then keep these in strainer to remove excessive oil
Now put 2 table spoon oil in another pan with remaining onions
When the onions are light golden,add red chili powder, turmeric powder,coriander powder and salt in it and stir for 5 minutes
keep adding some drops of water to cook properly
Add mince and cook till the meat changes colour
Now add tomatoes and stir
When it,s dry a bit add 1 cup of water and cover for 10 minutes
When the water is dry, add the bitter melons in pan
Cook till oil leaves the pan
Serve it warm
